Growing shiitake outdoors on a commercial scale is still a relatively new industry in the northeast.  By participating in a 3 year research project with Cornell extension and UVM extension Eddy Farm is one of 20 farms in the northeast that will be keeping detailed records and collecting data to further the forest grown shiitake industry.  Learning more about various facets of the process will help not only Eddy Farm Shiitake but create a database of information to encourage other farms and entrepreneurs to maximize shiitake mushroom harvests in the northeast well into the future.
