On the Eddy Farm in Middlebury Vermont a new local agroforestry crop is beginning to sprout. Gourmet shiitake mushrooms grown outdoors on forest logs are prized not only for their culinary and medicinal properties, but also provide an opportuinity to produce a sustainable agricultural product helping to increase the diversity in our local food base. In partnership with Cornell and the University of Vermont via a NESARE (Northeast Sustainable Agriculture Education and Research) grant, our goal at the Eddy Farm is to produce shiitake mushrooms for sale locally to restaurants and markets as part of the long-term forest/woodlot management of our diversified farm. By participating in the 3 year SARE funded project Eddy Farm helps Cornell and UVM collect valuable research data while developing our own shiitake farm into a commercially scaled enterprise .
